Mi Quang Chicken Noodles

Cut the chicken into bite-sized pieces. Marinate with all the seasonings and let it sit for about 1 hour to absorb the flavors.

Heat a pan over medium heat, add a little oil, and sauté the shallots until fragrant. Add the marinated chicken and stir-fry until the meat firms up. Pour in just enough water to barely cover the chicken, then simmer over medium heat until the chicken is tender.

When adding water, only add enough to just cover the chicken, as Mi Quang is meant to have a small amount of broth. If you like, you can add eggs at this stage.

To serve, place the herbs and noodles in a bowl, top with some roasted peanuts and broken rice cracker, mix well, and enjoy!
