Steps
- 1
Parboil rice and set aside (optional)
- 2
Blend fresh tomatoes, peppers and set aside
- 3
Wash and cook meat with enough spices, fry dry and set meat stock aside
- 4
Fry stew:add vegetable oil to cooking pot.allow to heat and add chopped onion and fry for few minutes. Add tin tomatoes puree and turn consistently to prevent burning.turn and fry till oil separates.then add blended tomatoes and peppers.
- 5
Fry stew for some time, add meat stock and spices and cook.check for salt and spices.add bale leave and cover to boil
- 6
Nb: party jollof rice doesn't require much water.start with meat stock only till you are required to add water as the cooking progresses.
- 7
When the stew stock is well done, add the parboiled rice.make sure the water just covers the rice and not much.add water if necessary just to cover rice and cook on low heat.cover pot during this period.
- 8
Check rice and check if soft enough.making sure to check underneath the if there is still water to know if it requires a little more or just enough to cook the rice.check for salt and spices
- 9
When water is dry and rice is soft enough, turn with a wooden spoon or stick and allow to burn away (literally 😆)
- 10
You will sure perceive the burning rice.not to worry that's where the party jollof rice taste and smell came from😉.after some minutes turn off gas and dish.enjoy
