Season the pork or lamb with smoked paprika then heat a grill pan to hot and sear the meat for 2-3 minutes and cook for a further 3-5 minutes until cooked . remove from heat and cover for a few minutes , then slice the meat .

place the finely grated zest and juice of the orange into a jar and add the red wine vinegar and the honey then place lid on to seal and shake well until all well combined , season with salt and pepper .

Place sliced cooked meat into a bowl and add the orange segments , red onion , red capsicum , the baby spinach leaves and the orange dressing and toss to combine all . garnish with parsley . enjoy . :-) .
