Place the meat in a bowl. Add all the marinade ingredients and mix well.

Cover the bowl and refrigerate overnight. If short on time, refrigerate for at least 1 hour.

In a deep pot, add the meat and cook over low heat. Add the tomato, cover, and cook until the meat is done.

Serve the shawarma with tahini sauce, and a side of parsley, onion, and sumac salad.
