Leek and green peas soup

This is a light green soup. Combination of leeks with green peas, fresh mint leaves, lemon, ... It's fresh and tasty, with a satisfying texture.

Thinly slice the leeks and cut into the small rings. Place them in a bowl with cold water and allow the leeks stay in the water for few minutes. Drain and rinse it. Heat the oil in a pan and add the leeks. Let it to cook for about 10 minutes.

Then, add green peas and allow to cook for 5 minutes more.

Pour 500 ml cold water in a pot. Bring it to boil. Add vegetable stock cubes to the pan. Simmer for few minutes.

Add cooked ingredients to the pot. Cover and simmer for 10 minutes.

Meanwhile, add lemon juice, salt and pepper to the cream cheese. Mix it very well. Add it to the soup.

Then add mint leaves. and cook for 10 minutes. Remove from the heat. Taste and adjust it.

Blend your soup with blender or food processor.

Serve it in a bowl and garnish it with mint leaves and cream cheese.
