Ingredients

8-10 servings
  • 1large red bell pepper
  • 2 cuprice long grain
  • 1 stickbutter
  • 1large onion
  • 1 teaspoonsalt
  • 1/4 cuptomato paste
  • 1 cupsparkling wine white
  • 4 cupwater
  • 1 cuppork Broth
  • 1/2 poundroasted Pork loin
  • 1 quartcanned pinto beans
  • 1/2 teaspoonground cumin
  • 1/4 cupsaffron infused oil see my recipe
  • 1/2 teaspoonground turmeric
  • 1 teaspoongranulated garlic

Steps

  1. 1

    Dice the onion and bell pepper and set aside.

  2. 2

    Heat the onion, saffron oil, and butter. Add the rice and coat with hot oil and butter. Cook stirring often till rice is browned. Add the spices.

  3. 3

    Add the water, pork broth, pork loin broken up, and bell pepper. Simmer for 12 minutes.

    Add the wine and Pinto Beans. Stir well then add the tomato paste. Stir in well.

    Simmer till water is almost gone. Cover and remove from heat don't disturb for 20 minutes.
