Chop cauliflower into very small florets.Cube into small pieces potatoes.Pour refined oil in a pan and fry cauliflower and potatoes separately on low flame till soft.Fry peanuts and set aside.Sprinkle sauf and kalonji and add the fried cauliflower and potatoes.Add 1 tbsp ginger paste, haldi, red chilli powder, salt to taste.Add the green peas and fried peanuts.Toss and add little water.Add the chopped green chillies and when done,sprinkle garam masala.This is the filling.

Add little salt, baking powder,ghee and 3 tbsp oil to the maida. Add enough water just to make a tight dough.Divide the dough into small balls.

Roll out each dough the size of puris. Cut from center and make into cones.Add little filling and seal all edges with water.Refrigerate for an hour to set.

Heat 11/2 cup oil in a wok and fry samosas in batches under low flame.Serve with tamarind chutney or hot and sweet tomato sauce.
