Fry the pork mince and leave to cool.

Slice the shallots and chillis, removing the seeds if you prefer it not too spicy!

Crush the peanuts in a pestle and mortar.

Chop the basil and coriander.

Squeeze the limes and mix with the fish sauce.

Mix all ingredients together and serve cold - larb is a cold, side dish!
