Ingredients

  1. cauliflower rice:
  2. 1small head of raw cauliflower
  3. 1 cupsprouted mix beans or lentils
  4. 1red bell pepper diced
  5. 1small organic zucchini diced
  6. 1small pomegranate seeds only
  7. 4-6fresh mint leaves chopped
  8. dressing:
  9. 1lime juiced
  10. 1small orange juiced
  11. 2 tbshempseed oil
  12. 1 tspcinnamon
  13. 1 tspcumin
  14. to tastesalt and pepper
  15. optional topping:
  16. 1/3 cupraw pistachos chopped
  17. leavesextra mint

Cooking Instructions

  1. 1

    Cut the stalk off the cauliflower and discard the leaves. Roughly chop it up and place it into the food processor and mix for 20 seconds into a rice like consistency (alternately, use a hand grader).

    Transfer to a bowl and add washed bean/lentil sprouts, chopped bell peppep,zuchinni pomegranate seeds and chopped mint leaves.

    In a separate small bowl, mix all the ingredients for dressing.

  4. 4

    Pour the dressing over salad and stir well.

  5. 5

    Chill for at least 1 hour to let the flavors combine.
