Cooking Instructions

Heat the milk in a wok. Add the grated carrots. Keep it in the medium flame and stir it in between.

Check whether the grated carrots have become soft. If yes, remove it from the flame.

Heat 1.5 teaspoon of ghee in another wok, and add the chopped cashews. Stir it until it becomes light brown.

Remove the cashews.

Add the green cardamom and stir until the aroma comes out, and then add the carrot and milk mixture and stir it for a minute.

Add the sugar and mix it very well.

Stir it untill the milk evaporates and becomes half and you get a thick and tighter consistency.

Add half the grated khoya and mix it very well until it becomes dry.

Add the cashews, raisins, black cardamom powder and ghee.

Mix it very well and remove it from the flame.

Garnish it with the rest of the grated khoya and serve chilled.

I know few of my recent posts have been from the dessert department, but what can I do when I have requests from the husband. Carrot Halwa has been one of them, and I finally got to it this weekend. I have known this dessert to be something that families whip up for special events like a birthday or anniversary, I am guessing its not a common dessert because of all the grating. The muscles in my right arm got an amazing workout grating the carrots. The ingredients are pretty basic, so if you have a grater you should be able to do this! :)I have provided measurements but the truth is I so did not follow this hahaha ...
