Heat a big pot. Add oil, methi seeds, mustard, jira, hing, green chillies, curry leaves. Let dem splutter

Add the besan and keep stirring on slow gas til it's golden brown

Add salt and dry spices and 2 litres water and chole or chana and mix well and check dat there r no lumps. Now add potatoes and gawar and let it boil.

Now slow the gas and cover the pot. Keep the cover slightly open so dat the curry should not over flow

Heat 1 litre water in another pot and add tamarind into it and keep aside to cool it

After 15-20 min open the curry and add cauliflower and mix well and cover it again

After 15-20 min add the lady fingers and strained tamarind water. Add extra tamarind water if u like

Let it boil on fast gas and dein cover and simmer it until done
