A basic chicken stew. It is a staple in our home. This time I did cheat with using some canned items. The cost of convenience when in a hurry to get to work :)

Ingredients

  1. 4chicken quarters cleaned and parted
  2. 1onion
  3. 4garlic cloves
  4. 1diced pepper of choice we use poblano and red jalepenos
  5. 1/8 cupdiced celery-optional-often I don't have any
  6. 1 canpetite diced tomatoes
  7. 1/2 cansmall red enchilada sauce
  8. 1 Tablespoonchicken consomme
  9. pinchoregano
  10. pinchannatto
  11. to tastesalt and pepper
  12. 4potatoes diced---- sometimes we use chayote, zucchini, carrots, any veggie of choice or what you have on hand locally and seasonally

Cooking Instructions

    Brown the cleaned chicken pieces in a large pan until it is golden. I used non stick so it didn't need any oil.

    Add in the vegetables & seasoning to saute around the chicken.

    Add the Tomatoes and enchilada sauce. Cover and simmer until the Chicken is almost tender

  4. 4

    Add the potatoes and recheck the season let finish simmering until the potatoes are done.

    We serve this over our favorite rice of the day. & on this day I was nice to the kids and cooked the summer squash apart using a couple ladles full of the guiso=stew sauce.

Mostly I just wanted to save my recipes because I always forget how I made really good food. It's so much easier to save them this way. If someone else can enjoy the recipe or just the inspiration, well then, all the better.
