Chicken guisado

A basic chicken stew. It is a staple in our home. This time I did cheat with using some canned items. The cost of convenience when in a hurry to get to work :)

Cooking Instructions
- 1
Brown the cleaned chicken pieces in a large pan until it is golden. I used non stick so it didn't need any oil.
- 2
Add in the vegetables & seasoning to saute around the chicken.
- 3
Add the Tomatoes and enchilada sauce. Cover and simmer until the Chicken is almost tender
- 4
Add the potatoes and recheck the season let finish simmering until the potatoes are done.
- 5
We serve this over our favorite rice of the day. & on this day I was nice to the kids and cooked the summer squash apart using a couple ladles full of the guiso=stew sauce.

P-lo's Carne Guisado 👈 🏼Spanish Beef stew P-lo's Carne Guisado 👈 🏼Spanish Beef stew
My grandmother made this and I gave it my twist!.. Good as stew or over rice... Keep your carrots and potatoes a lager cut this way when it's boiling down doesn't turn to mush and add frozen peas I find better hold than can peas the last 5 minutes .. For a robust flavor add tub of Sofrito in frozen Spanish section .. I will make soon and post.. My grandmother added can of tomato sauce as well when I add my tomatoes plus small can of tomato paste when add Sazon packets... Didn't have so didn't use good either way heather_p_lo -

Chicken Pochero Chicken Pochero
I never liked beans; but over time I grew to love them. I ESPECIALLY like anything simmered in tomato sauce. Here’s a terrific fusion of the two; another Filipino household favorite.PS: Grandma likes to pan-fry the potatoes, chicken, and plantains ahead of time to get some color on the outside, but it’s purely for aesthetics. This version doesn’t do that - but you can totally do it grandma’s way if you like :) Cheryl -
