Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).

Beat the coconut oil with the two sugars until fluffy.

Add the eggs, one at a time.

Add the vanilla.

Add the flour combined with the baking powder and salt.

Beat until everything is mixed.

Using a wooden spoon, gradually mix in the chocochips, cacao nibs, or dark chocolate chips.

Form cookie balls (I weigh them to ensure each is 50 grams for medium-sized cookies).

Place the cookies on a baking sheet lined with parchment paper or floured and greased to prevent sticking.

Bake for 10 minutes or more as needed until you see the edges turn golden brown.

Remove from the oven and let cool. I recommend not touching them immediately as they will be very soft and may fall apart in your hand.

Once they are cool and have firmed up a bit, store them in a covered container to prevent them from becoming hard.
