Ingredients

  • 2 poundsraw medium shrimp, peeled and deveined
  • 2 tablespoonschili powder
  • 2 tablespoonsground cumin
  • 1 tablespoonpaprika
  • to tasteSalt and pepper
  • 4eats fresh corn, kernels removed and sautéed (5 to 8 minutes in a bit of olive oil)
  • 2 cans(15 oz/can) black beans
  • 1/3 cupfinely chopped red onion
  • 1/3 cupchopped cilantro
  • 2 cloveschopped garlic
  • 3 tablespoonsolive oil
  • 2 teaspoonscrushed red pepper flakes
  • 6limes: 5 juiced, 1 sliced
  • 4 tablespoonshoney
  • 2avocados
  • 4-5 cupsmixed greens
  • Cilantro for garnish

Steps

  1. 1

    Combine shrimp, chili powder, cumin, paprika, salt, and pepper in a medium bowl, mix well and refrigerate.

  2. 2

    In a separate bowl, combine corn, beans, onion, cilantro, 1 tbsp garlic, salt, and pepper.

  3. 3

    Over medium heat, in same pan, heat oil and crushed red pepper. Add shrimp mixture and sauté 2-3 minutes until pink. Place cooked shrimp into corn mixture.

  4. 4

    Again over medium heat, in same pan, combine lime juice, honey, 1 tbsp garlic, and a pinch of salt. Whisk for a few minutes until dressing is reduced and thickens. Pour dressing over shrimp and veggies and tumble gently. Add more salt and pepper if needed.

  5. 5

    Cut avocados into medium dice, add to salad and gently mix. Serve warm or chilled over greens and garnished with cilantro and lime slices.
