Ingredients

  1. 1 cupmargarine-2 sticks
  2. 3 cupsgranulated sugar
  3. 6large eggs
  4. 1 tablespoonvanilla
  5. 8 ozcream cheese
  6. 1/2 cupsour cream
  7. 3 cupsflour- all purpose
  8. 1 teaspoonsalt
  9. 1 1/2 teaspoonsbaking powder
  10. 2 cupsflaked sweetened coconut

Cooking Instructions

    Preheat oven to 350. Cream together margarine, cream cheese that’s room temp, and sour cream. Add sugar and cream well. Add 6 eggs, 2 at a time. Add flour 1 cup at a time. In the second cup of flour add the salt and baking powder and mix before dumping. Once flour is incorporated, add 2 cups of coconut, mix well.

    Spray your bundt pan heavily with non Stick spray. Pour batter into pan and level it out with a spatula. Bake at 350 for 1 hour and 15 minutes or until skewer comes out clean.

    Invert onto a cake plate and store in an airtight container.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
