Ingredients

  1. 6eggs
  2. 6 ozspinach - blanched and chopped
  3. 1 1/3 cupmilk
  4. 1 cupRicotta or more
  5. 1 1/2 cupmozzarella
  6. 1/2 cuploccatelli
  7. 4 tablespoonschopped onion
  8. 1 1/2 cupsBroccoli, mushrooms, red pepper - about
  9. 1potato thinly sliced on bottom of pan
  10. 1 tspsalt
  11. Croutons for top

Steps

  1. 1

    Beat eggs and then add ricotta and grated cheese use immersion blender. Add potato and vegetables to pan then pour egg mixture on top. Top with croutons to absorb excess liquid.

    Cook for 50 minutes or until set at 350 bake conversion.
