I was craving som tam and grilled chicken, but after seeing a street vendor sitting with her legs wide open, skewering chicken while smoking, I decided it was better to make it myself.

I was craving som tam and grilled chicken, but after seeing a street vendor sitting with her legs wide open, skewering chicken while smoking, I decided it was better to make it myself.

Wash the chicken and pat it dry. Place it in a bowl and set aside while you prepare the other ingredients.

Mix the palm sugar, soy sauce, and Thai herb paste together. Knead until the sugar dissolves. Add the salt and a little food coloring, then add the chicken and mix well. Let marinate for 30 minutes.

Thread the marinated chicken onto skewers. Prepare to grill over low heat. (Today I used a charcoal grill, and the neighbors gathered around to watch!)

Grill the skewered chicken over low heat. Watch closely, as it can burn quickly. If any parts get burnt, just trim them off with scissors.

Once done, the chicken will smell amazing!
