It is spicy traditional recipe of rice with loads of vegetables. Authentic dish of Maharashtra.

Rinse the rice. Soaked it for 30 minutes.

Cooked the rice in pressure cooker with 1 tsp ghee and 3 1/4 cup water on medium flame for 1 whistle reduced the flame to low and cook for 2 to 3 minutes. Switch off the gas.

Let the pressure released naturally. Open the lid and loosen the rice with fork. Keep it aside.

Heat the ghee in pan on low flame. Add cumin seeds, asafoetida, ginger chilli paste, turmeric powder and sauté.

Then add tej patta, chopped vegetables sauté it. Add red chilli powder, goda masala and mix well. Cook for 2 minutes.

Now add cooked rice and mix well. Add salt, lemon juice and mix gently.

Cover it with the lid and cook for 5 minutes on low flame.

Switch off the gas. Masale bhat is ready. Serve with bundi raita. You can add onion and garlic for flavour.
