Ingredients

  1. 2 cup basmati rice (regular rice)
  2. 3 1/4 cupwater
  3. 2 cupmix chopped vegetables (as your choice) like carrot, sweet corn, potato, cauliflower, brinjal, tondali etc
  4. 1 tspturmeric powder
  5. 2 tspcumin seeds
  6. 2 tbs ghee
  7. 1/4 tsp asafoetida
  8. 2 tsp ginger chilli paste
  9. 1 tspCoriander seed powder
  10. 1/2 tsp cumin seed powder
  11. 1 tbsgoda masala
  12. 1 tej patta
  13. 1/2 tspred chilli powder

Steps

  1. 1

    Rinse the rice. Soaked it for 30 minutes.

  2. 2

    Cooked the rice in pressure cooker with 1 tsp ghee and 3 1/4 cup water on medium flame for 1 whistle reduced the flame to low and cook for 2 to 3 minutes. Switch off the gas.

  3. 3

    Let the pressure released naturally. Open the lid and loosen the rice with fork. Keep it aside.

  4. 4

    Heat the ghee in pan on low flame. Add cumin seeds, asafoetida, ginger chilli paste, turmeric powder and sauté.

  5. 5

    Then add tej patta, chopped vegetables sauté it. Add red chilli powder, goda masala and mix well. Cook for 2 minutes.

  6. 6

    Now add cooked rice and mix well. Add salt, lemon juice and mix gently.

  7. 7

    Cover it with the lid and cook for 5 minutes on low flame.

  8. 8

    Switch off the gas. Masale bhat is ready. Serve with bundi raita. You can add onion and garlic for flavour.
