Light and fluffy cupcakes
Steps

Preheat oven to 180°C.

Sift flour and baking powder and set aside.

Heat milk and oil and set aside.

Beat sugar, eggs and vanilla essence until light and creamy.

Add flour mixture alternately with the milk and oil mixture.

Spoon into cupcake cases. Bake in a preheated oven for 15 - 20 minutes.

Cream butter and icing sugar until creamy and light in colour.

Add vanilla essence and food colouring and mix until smooth. Add a tablespoon or two of milk to make a spreadable icing.

When cupcakes have cooled, decorate with icing and sprinkles.
