Got inspired by a recipe on cookpad and since I had leftover cow leg in my fridge I decided to put it to work; worth every spoon

Wash tomatoes, pepper, onion, ginger and garlic and blend then set aside

Perboil already cooked cow leg and spice to your taste, once its cooked thoroughly till its soft then set aside.

Heat up a pot add vegetable oil, add a pinch of salt; pour in blended tomatoes paste fry continuously till the water is dried up and the oil is floating on the top,

Add the cowleg, stir in the meat stock if necessary for me i like my stew abit thick, add knorr cube, oregano and salt, confirm taste and allow it simmer for another 5 to 7 minutes and turn off heat

Serve with hot white rice
