  1. 1.1 lbs (500 grams)paccheri rigati pasta
  2. 3 1/4 cups (750 grams)diced tomatoes
  3. 10.5 oz (300 grams)mortadella (one thick slice)
  4. 10.5 oz (300 grams)green cabbage
  5. 2garlic cloves
  6. 1green onion
  7. Parsley
  8. 7 oz (200 grams)Swiss cheese slices (such as Emmental)
  9. as neededOlive oil,
  10. as neededSalt,
  11. as neededPepper,
  12. Chili oil (made with dried chili, then fried)

  1. 1

    Cut the mortadella into very small cubes and set aside.

  2. 2

    In a large pan, sauté the two halved garlic cloves in a little olive oil until golden. Remove the garlic, add the mortadella, and cook over low heat for a few minutes.

  3. 3

    Once the mortadella is browned, add the cabbage with 1/4 cup (about 60 ml) water and some parsley. Season with salt and pepper, then cook until the cabbage is tender (add more water if needed).

  4. 4

    Meanwhile, in another pan, sauté the green onion in a little olive oil. When it becomes translucent, add the diced tomatoes, season with salt, and cook until done.

  5. 5

    Bring a large pot of water to a boil, add two generous handfuls of salt, then add the pasta and cook until al dente. Drain.

  6. 6

    Toss the pasta in a bowl with some of the tomato sauce, being careful not to break the pasta.

  7. 7

    Take a baking dish and arrange half of the paccheri in a neat layer.

  8. 8

    Add a layer of the cabbage and mortadella mixture, then top with some of the Swiss cheese slices.

  9. 9

    Add the remaining paccheri in another neat layer.

  10. 10

    Top with the rest of the tomato sauce and the remaining Swiss cheese slices.

  11. 11

    Drizzle with a little chili oil and bake (baking time depends on your preference; I like the pasta not too browned).
