Soak the Tapioca / Sabudana for about 3 hours so that it becomes soft and gets easily cooked.

Boil the potatoes for about 20 min until they are perfectly cooked.

Peel and mash the potatoes with the help of a fork.

Now add in the Red Chilli Powder, Turmeric Powder, Garam Masala Powder, Jeera Powder, and Salt to taste and some Green Chillies to the mashed potato.

Add in the Soaked Tapioca / Sabudhana on to the mixture.

Add chopped Cilantro and squeeze some lemons and Lemon Zest to add the tanginess.

Mix well until all the spices and the tapioca and potatoes are combined and form nice dough.

Now make lemon sized balls with these mixtures and keep aside.

For Mint Chutney Bombs:

In a blender add in Grated Coconut, Mint leaves, Cilantro, Tamarind, Lemon Juice and Green Chillies and form a thick paste.

We need this Chutney to be little thick because this needs to be filled in the sabudana vada.

If the prepared chutney is bit runny then make sure to discard the water by sieving it.

Now take the prepared tapioca Balls, flatten it and add a teaspoon of thick Mint Chutney and wrap it and roll the balls.

Follow the same procedure and keep aside the tapioca/ sabudana vada balls ready.

Now you can deep fry these sabudana vada, until it turns out light crisp golden brown..

Making on a healthier way I preferred to fry the vadas on the above pan, bit in traditional way.

Pre heat the above pan, then add small amount of cooking oil or butter, then pour in the mixture on to the holes of pan elegantly.

Leave it to cook on a medium low heat, until it turns out nice golden brown.

Serve the tapioca vada with delicious chutney, hot.
