Cooking Instructions

Oven Temperature / 350F
Baking Time / 5 min - 2
Roast the walnuts until lightly browned.

Pour the cold water into the gelatin powder and stir until well mixed. Store in the fridge until ready to use.

Add the milk and roasted walnuts to a medium saucepan. Bring to a boil, then simmer over low heat for 5 min. (Don't forget to use a lid).

Add the gelatin to the solution and mix well.

Strain the solution. Let cool at room temperature or until it reaches 20C (just before solid).

Add the sugar and cream to a large mixing bowl and whip until the cream is fluffy and stiff.

Add the solution to the whipped cream gradually and mix well.

Pour the mixture into the molds and place in your fridge until solid.

Prepare hot water. Soak the molds in hot water for a few seconds to remove the blanc-mangers from the molds.

- Kahlua Milk -

Pour the milk and Kahlua into a small mixing bowl and mix well.

Pour the Kahlua milk over the blanc-mangers.

Decorate as you like.

If the recipe amount of the walnuts and chocolate are both 50 g, I wanted to make the recipe amount of everything except the baking powder, milk, and rum 50 g as well, but I ended with this recipe since it is too sweet with 50 g of granulated sugar and chocolate bar. It might be ok to have 50 g of granulated sugar, depending on your preference.Please handle with care when you take the madeleines out of the mold, since they are very moist. I made tart plum jam and decided to try it with blanc mange.I have trouble drinking milk in the summer, but this way it just slides down.Make sure the milk from Step 2 is chilled well in the refrigerator and before mixing with heavy cream. I tried making this recipe with half the ingredients, but the whipped cream wouldn't whip right, so I doubled the ingredients for this.Almond essence and sliced almonds are good to add if you have them, but it will still be delicious without them. I wanted to eat mont blanc but the paste is so expensive. I wanted to make a simple yet gorgeous tart that could almost look shop-bought, so I filled this tart with mousse. For the mousse, I used milk jam that I had been given as a souvenir from Europe.The chocolate will prevent the tart from cooling.The sweet chestnuts I used were on sale. I bought 3 x 90 g bags and used 2 bags for paste and 1 bag for decoration.I don't have a food processor or hand mixer so I used a masher to crush the walnuts.
