Ingredients

  1. 3.5 ozguanciale (about 100 grams)
  2. 2eggs
  3. 2 tablespoonsgrated Parmesan cheese
  4. 2 tablespoonsgrated pecorino cheese
  5. Salt, to taste
  6. Black pepper, to taste
  7. Spaghetti
  8. 1green onion

Cooking Instructions

    Heat some oil in a skillet. Once hot, add the guanciale cut into small cubes and sauté until almost crispy. Then add the green onion sliced into thin rounds and cook until golden.

    In a deep bowl, combine the two eggs, Parmesan, pecorino, a pinch of salt, and black pepper. Mix everything together with a fork until well blended.
