Heat some oil in a skillet. Once hot, add the guanciale cut into small cubes and sauté until almost crispy. Then add the green onion sliced into thin rounds and cook until golden.

In a deep bowl, combine the two eggs, Parmesan, pecorino, a pinch of salt, and black pepper. Mix everything together with a fork until well blended.

Meanwhile, bring a pot of water to a boil and cook the spaghetti. Once cooked, drain the spaghetti and return it to the pot. Add the guanciale with the onion and the egg and cheese mixture. Turn the heat to high and cook for one minute, stirring everything together. Serve hot. 😍
