Ingredients

  • For Coriander Water
  • 25 gramsCoriander -
  • 15 grams. Mint leaves -
  • 2. Green chilli
  • 2 teaspoons Black salt -
  • 1 tablespoon Lemon juice -
  • 6. Water - 2 tablespoon while grinding
  • 3 cups. Water -
  • 2 tablespoon. Boondi -
  • . For Asafoetida Water
  • 2 teaspoonsAsafoetida -
  • 1 teaspoon . Black salt -
  • 2 teaspoons. Chaat masala -
  • 1.5 tablespoon. Tamarind paste -
  • 3 cups. Water -
  • 2 tablespoon. Boondi -
  • . (For Mint Water)
  • 25 grams:Mint leaves -
  • 20 gramsGreen chilli -
  • 1 teaspoon. Black salt -
  • 1 teaspoon. Chaat masala
  • 2 tablespoon. Water - while grinding
  • 3 cups. Water -
  • 2 tablespoon. Boondi -
  • . For Cumin Water:::
  • 2 TbspRoasted cumin powder -
  • 1 teaspoon. Black salt -
  • 2 teaspoons. Chaat masala -
  • 1 teaspoon. Lemon juice
  • 3 cups. Water -
  • 2 tablespoon. Boondi -
  • . For Potato Filling:
  • 360 gramsBoiled potatoes -
  • 110 grams. Onions -
  • 1 tablespoon. Mint -
  • 1 tablespoon. Coriander
  • 1 tablespoon. Red chilli
  • 1 tablespoon. Cumin powder
  • 1 tablespoon. Chaat masala
  • 1 tablespoon. Salt
  • 1 tablespoon. Lemon juice
  • . For Puris:
  • 1 CupSooji
  • 1/4 Cup. All Purpose Flour
  • 1/2 teaspoon. Salt
  • 1/2 cup or lessWater

Steps

30 Minutes
  1. 1

    For Coriander Water
    Blend into a smooth paste all the ingredients except water and boondi.
    Pour it into a bowl, add water, boondi and mix it well.

    For Asafoetida Water
    Blend into a smooth paste all the ingredients except water and boondi.
    Pour it into a bowl, add water, boondi and mix it well.

  3. 3

    For Mint Water ::Blend into a smooth paste all the ingredients except water and boondi.
    Pour it into a bowl, add water, boondi and mix it well.

  4. 4

    For Cumin Water:: In a mixing bowl, add all the ingredients and mix it well.

  5. 5

    For Potato Filling:: In a mixing bowl, add all the ingredients and mix it well.

  6. 6

    Puri Making::Take all the puri ingredients in a bowl. mix all well and knead a smooth dough. let it sit for 15 minutes.

  7. 7

    Sooji will soak all the water and the dough remains soft.
    Divide the dough in 2 parts and start rolling into a big chapati, with the help of cookie cutter or any container cup cut into round puris.

  8. 8

    Fry it in a hot oil. All puris will pluf on it's own. It will Make 40 Puris

  9. 9

    Assembling Pani Puri: Take some puris and crack them from top. Fill the potato mixture in it.sprinkle some sev on top.

    Top with sweet chutney.

  10. 10

    Pour the pani in each puri.
    Enjoy 4 various flavors pani puris.
