Ingredients

4 servings
  1. 1 lbfresh green beans, trimmed and rinsed
  2. 2 tspEVOO
  3. 16 ozbutton mushrooms, sliced
  4. 4 clovesgarlic, sliced
  5. 1lemon, zested and juiced
  6. 1yellow onion, cut in 1/4" rings
  7. 1 lbboneless skinless trimmed chicken breast, sliced 1/2" thick
  8. 2 Tbalsamic vinegar
  9. 2 tspdried thyme
  10. 1/2 tspsea salt

Cooking Instructions

  1. 1

    Prepare beans until tender/crisp and set aside.

  2. 2

    In large skillet, heat 1 tsp oil. Add mushrooms and saute 10 min.

  3. 3

    Add garlic, lemon zest and juice and saute 3 min. Remove from heat and add beans. Cover to keep warm.

  4. 4

    In another skillet, heat 1 tsp oil and saute onion 5 min. Add chicken, vinegar, thyme and salt. Cook until chicken no longer pink.

  5. 5

    Divide chicken and mushroom mixtures to plates and drizzle with pan juices.
