Heat the pork lard in a large pot. Add the chopped garlic, onion, and bell pepper. Sauté until fragrant.

Add the smoked ham and chorizo, and continue sautéing. Add the drained chickpeas and the chopped carrot.

Add the washed rice and sauté. Pour in the water or broth, then add the oregano and bay leaf.

Stir in the tomato sauce. Taste and adjust the seasoning as needed. Cover and cook according to the time needed for rice in your pot.

Once the rice is cooked, uncover and fluff the rice with a fork to keep the grains separate.

Serve and garnish with celery leaves.
