Ingredients

  1. 1 cankidney beans, rinsed and drained
  2. 1 canchickpeas, rinsed and drained
  3. 1 canpinto beans, rinsed and drained
  4. 2garlic cloves, minced
  5. 2 cans (14.5 oz)diced tomatoes with juice
  6. 2 tspground cumin
  7. 1 tbslime juice
  8. 2 tbschili powder
  9. 1 tsplime zest
  10. 3 tbsfresh parsley (1 tbs dried parsley)
  11. 3 tbsfresh cilantro (1 tbs dried cilantro)
  12. 4 ozlight beer (optional)-this one was my idea
  13. 1small avocado, chopped
  14. 1/4 cuppart skim mozzarella cheese-optional
  15. 1 tspfresh grated ginger

Cooking Instructions

40 mins
  1. 1

    Combine all ingredients in a crockpot. Mix well.

  2. 2

    Cook on high for 1 hour. Reduce heat

  3. 3

    Serve on top of your favorite rice, top with a few pieces of avocado and 1-2 tbs of cheese if desired. (You can also choose to cook this in a regular pot on the stove top)
