Hummus with Tahini (Mutabbal Hummus)

Ingredients

  1. 2 cupscooked chickpeas (about 330 grams)
  2. 1espresso cup tahini (about 2 1/2 tablespoons or 40 grams)
  3. Juice of 1/2 lemon
  4. 1/4 teaspooncitric acid, or to taste
  5. Salt, to taste
  6. 2garlic cloves
  7. Olive oil
  8. For garnish:
  9. Vegetables of your choice
  10. A fewwhole chickpeas
  11. Pickles
  12. 1 pinchpaprika

Cooking Instructions

    In a blender or food processor, combine the cooked chickpeas, tahini, lemon juice, salt, citric acid, and a little of the chickpea cooking water or plain water. Blend until very smooth.

    Note: If you don't have an electric appliance, mash the chickpeas by hand, then add the remaining ingredients and mix well.

    Garnish with whole chickpeas, vegetables or pickles, and a sprinkle of paprika. Drizzle with olive oil and serve alongside grilled meats, beef shawarma, or as you like. Enjoy!
