This colorful dish is another clean recipe that's not bland or boring.
Cooking Instructions

Cut the dolly fish into small pieces.

Mix the curry paste with 1 1/2 boxes of coconut milk and combine with the fish.

Crack the egg into the mixture and season with fish sauce, sugar, and salt. Add 1 sliced kaffir lime leaf for fragrance. *I secretly added 1 teaspoon of rice flour.

If you want to taste the flavor, you can microwave a small portion.

Blanch Bai Yor leaves and place them at the bottom of a bowl, or use basil or cabbage as desired.

Spoon the fish mixture into a bowl and steam over boiling water for about 15 minutes. The time may vary depending on the container used. It's recommended to cover the bowl with foil to prevent water from getting in.

While waiting for the steaming, heat a little coconut milk and add rice flour to use as a topping.

Garnish with coconut milk, sliced red chili, and sliced kaffir lime leaves. Serve.

Several months ago I posted a recipe for green seafood curry. Today it's red's turn. To be honest, I actually prefer red curry to green. I love the extra kick of heat. The addition of sweet bell pepper gives this version a bit of additional freshness, almost like a fruitiness. As written below, this curry is pretty mild (so that my daughter could eat it). If you'd like more heat, just add extra Thai chilies. Also, feel free to play around with the veg. I used carrots and bok choy because they happened to be in my fridge. Robert Gonzal
