Ingredients

  1. 2 1/2 lbssirloin steak (1in cubes)
  2. 4-5 slicesbacon (chopped)
  3. 2med. Onions (small dice)
  4. 4-5large carrots (large dice, peeled)
  5. 4 stalkscelery (large dice)
  6. 4large garlic cloves (fine dice)
  7. 14 ozGuinness stout
  8. 2 tbssugar
  9. 2bay leaves
  10. 2 cupschicken broth
  11. 1/4 cuptomato paste
  12. 2 tbsflour
  13. Salt&pepper

Cooking Instructions

    Brown bacon in skillet. Leaving fat in pan, just add bacon to soup pot.

    Brown steak cubes that have been well seasoned with salt & pepper to the skillet and bacon fat. Brown in batches. Leaving juices and fat in skillet, just add steak to soup pot. Add flour to meat mixture, and coat.

    On med heat add onions and garlic to pan. Saute til lightly browned. Then add to the soup pot.

    Meanwhile add bay leaves, sugar, and tomato paste to the soup pot.

    Last saute carrots and celery til fragrant. Add to soup pot.

    Add Stout and broth to pot. Replace skillet with soup pot on stove. Bring to boil. Simmer 1-2 hours til steak is tender.

    Serve with mashed potatoes.

Living up in the mountains, not always having the gas, time, or best weather conditions to get to town for groceries. We run out of things quickly and I have to use what I have. Though I now have a stove and oven, many of my recipes here were from when I didnt. I've had to get quite creative, and find other ways to cook. Like in a toaster oven and an electric skillet. I thought if anyone else has my same issues it'd be great to share my simple minimalist recipes. And find some great ones too.
