In a bowl add the ingredients. Stir well before adding water to form a soft dough. Let it sit for 5mins. Knead again and make small balls. Flatten each ball with a rolling pin and deep fry in hot oil till golden brown.

In a pan add 2 tablespoons vegetable oil. Heat for few minutes.add chopped onions and fry till translucent. Add chopped tomatoes and stir till all the water is absorbed. Add 2 stock cubes, coriander powder and some salt. Stir for few seconds. Add 5 beaten eggs and let it sit for 30seconds before stirring. Cook till eggs are fully cooked and oil is visible. Serve with your fried fateera.
