Mix sugar and margarine and mix together well

Add the beaten eggs then mix the mixture well Add flour by bits while stirring the mixture

Add milk to the mixture and lemon zest then mix well Add vanilla essence to mixture and mix

Put then mixture in cupcake tins....then put them in a muffin tin

Put in an oven to bake

After baking top up with whipping cream icing
