Sweet Potato Mochi with Cheddar and Toasted Coconut

Peel and slice the sweet potatoes. Cut the Cheddar into small cubes. I bought the toasted coconut at the supermarket.

Boil or steam the sweet potatoes until cooked. Once cooked, mash them in a bowl with a fork. Sift the two types of flour into the bowl with the sweet potatoes and add salt. Knead until the mixture is smooth and well combined. Let the dough rest for 15 minutes.

Divide the dough into 20-gram portions, flatten them, and place a piece of Cheddar inside. Roll them into balls. Repeat until all ingredients are used. Place the sweet potato mochi balls in a steamer. Cover and steam until just cooked. Be careful not to over-steam, as the mochi will expand too much and spoil the batch.

Let the cooked mochi cool, then roll them in toasted coconut. Arrange on a plate and enjoy 😍 This sweet potato mochi is unique and delicious! Note: If you prefer a sweet version, use palm sugar as the filling. It's amazing, but I prefer cheese and a salty flavor 😀
