Pad Thai with Shrimp

Soak the dried rice stick noodles in room temperature water for about 30 minutes or until softened.

Make the Pad Thai sauce: Combine all sauce ingredients and simmer over low heat until blended. Set aside.

Slice the tofu into thin pieces and fry until golden. Set aside.

Heat a little vegetable oil in a wok. Add the shrimp and stir-fry until just cooked. Add the fried tofu, chopped shallots, chopped salted radish, and dried shrimp. Stir-fry until fragrant. Add the softened noodles and stir-fry. Pour in the Pad Thai sauce and toss to combine. Push the noodles to one side of the wok, add a little more oil, crack in the eggs, scramble them, then fold the noodles over the eggs. Add bean sprouts and garlic chives, stir-fry everything together, and sprinkle with crushed peanuts.

Serve immediately. Add extra chili powder and a squeeze of lime if desired.
