Dahi orro. (aubergine in yogurt)

Remove the skin of aubergine and steam for 15 minutes in a steamer.

Once steamed let it cool. Mash the steamed aubergine and leave it aside.
In a bowl add yogurt, salt, ginger paste, garlic paste and chilli paste. Mix well and add the mashed aubergine. Garnish with spring onion, coriander, tomatoes, pomegranate and capsicum.
Leave it in fridge for couple of hours. - 3
