Does eating gluten-free vol-au-vent seem impossible? Here’s the trick I found...
Steps
- 1
Cut the puff pastry into circles: use a glass to make large rounds, then use a cookie cutter to make smaller circles in about half of the large rounds.
- 2
Stack the circles and seal the layers together with a little water. Brush the top with beaten egg. (I stacked 4 full circles, then 3 circles with holes.) Bake for about 30 minutes at 350°F (180°C).

To avoid waste, I used the leftover dough to make small pastries. I cut out small circles, brushed them with egg, and sprinkled them with a mixture of light brown sugar and cinnamon. Bake for 10 minutes, and you’ll have a delicious snack!
