I love Masa, Masa is a dish from Northern Nigeria. It is a cake or bun or muffin made with grounded rice and yeast to make a fermented mixture and fried in a ‘tanda’- a sort of cast iron muffin pan😁. Over the years I have tried various pans- even the non stick pan and although they ended up shaped like pancakes, they have satisfied my taste buds. I have also made mistakes in the journey but I think I am a master now😁. Here is a recipe for my take on an amazing compliment to your Masa, the soup, some people just like to dab the Masa Cakes in yaji, some like to dab it in Kuli -kuli powder, some can even do stew, but this soup is perfect for me!

Ingredients

  • Recipe:
  • Pumpkin & Peanut Soup
  • 1/2kilo Chicken wings cut in sections, easier to eat! Feel free to change the protein, try dried fish.... it’s been on my mind for a while now..
  • 1 cupTomato and pepper mix-
  • 1 cupPuréed Roasted Pumkin
  • 1 cupPuréed Onions
  • 1/2 cuppeanut butter
  • 1 tablespoonSugar to balance the peanut butter saltiness
  • 1/2 cupchicken stock, to loosen the soup
  • salt -black pepper

Steps

    In a sauce pan, add some oil, then pan dear the chicken wings adding salt and black pepper, when the chicken is well seared, add the puréed onions and mix, allow to fry, then add the tomato mix, as soon as it starts to boil, add the pumkin purée and peanut butter. Taste before adding a little sugar for balance. If you don’t need it you can leave it out. Use the chicken stock to loosen it.
