Ingredients

  1. 1 bunchChinese chives
  2. 2 tablespoonsdried small shrimp (about 30 grams)
  3. 1 pounddumpling wrappers
  4. pork filling
  5. 1.1 poundsground pork (500 grams)
  6. 2 tablespoonssesame oil
  7. white pepper, to taste
  8. 2 tablespoonsmirin
  9. 1/3 cupSichuan peppercorn water (80 ml)
  10. 1egg
  11. salt, to taste

Cooking Instructions

    Mix the ground pork with the seasonings listed above, stirring in one direction until the mixture becomes sticky. Refrigerate until ready to use.

    Blanch the dried shrimp in hot water, then drain. Finely chop the chives and toss them with a little sesame oil to help keep them crisp and juicy.

    Add the marinated pork filling to the chives and shrimp, and mix until well combined.

    Bring a pot of water to a boil. Add the dumplings and cook until the water returns to a boil. Add 3 tablespoons (50 ml) of cold water, bring to a boil again, then remove the dumplings.
