Cooking Instructions

Mix the ground pork with the seasonings listed above, stirring in one direction until the mixture becomes sticky. Refrigerate until ready to use.

Blanch the dried shrimp in hot water, then drain. Finely chop the chives and toss them with a little sesame oil to help keep them crisp and juicy.

Add the marinated pork filling to the chives and shrimp, and mix until well combined.

Bring a pot of water to a boil. Add the dumplings and cook until the water returns to a boil. Add 3 tablespoons (50 ml) of cold water, bring to a boil again, then remove the dumplings.

The skins will stretch a lot and you'll wonder "what if it won't hold the filling?" but they will. The dumplings will puff up when they are steam-fried so leave some space in between them.
