Love spinach & eggs.
You can add the eggs into a nest of baby spinach or opt for scrambled eggs.
I did a scrambled version today so that any left overs can used as filling wraps for breakfast tomorrow.

You can add the eggs into a nest of baby spinach or opt for scrambled eggs.

Heat up oil in pan. Throw in the garlic. Omit garlic if you dislike. Fry till fragrant.

Add in the spinach. Fry till wilted. Add the wine.

Add in the eggs. Add all other seasoning. Lower heat. Continue to stir till you get the consistency you like.

Once eggs are set. Off fire. Top with pine nuts if using. Bon appetite !
