Place the olive oil in a large pot over a medium-high heat on the stove-top.

Toss the beef with the flour, salt and pepper in bowl until all the pieces are equally coated.

Add the beef to the hot pot and brown on all sides, about 5-7 minutes.

Add the garlic, bay leaf, onion, tomato paste and broth to the pot. Stir to combine and cook for another 3-5 minutes then reduce the heat to medium-low and simmer for 2 1/2 hours to 3 hours or until meat is soft and tender. Add water as needed when it starts to dry.

Add the courgettes and peppers 15 minutes before removing the pot from the heat.

Serve with rice or other grains of choice.
