Congee with Bitter Melon

Bitter Melon is nutritious, but has a strong flavor. It's the main reason why I believe mixing it with this specific comfort food dish COULD help a person overcome a cold.
Take note that I am using a YumAsia brand rice cooker that has a porridge option. So how I am making this dish will be different from how you will be able to make it.
I'm honestly posting this so that I remember how I made it when I get sick again~

Cooking Instructions

Measure out the ginger and garlic paste.

Mash Ume into a paste

After washing your rice (not too much), add it to your rice cooker pot.

Fill the rice cooker with chicken stock up to line "2" and fill with water up to line "3" (or follow the recipe in the cookbook that comes with your rice cooker)

Add your Ume and garlic ginger paste.
Close the lid and press the "Porridge" option. This will take 1 hr and 30 min to cook! - 6
Cut the bitter melon in half and remove the seeds and fluff. Cut them in half again and then slice into bite sized pieces.

Add the seasonings, oil, Mirin, soy sauce, onion and chicken into a pan.

Make sure chicken is mostly cooked before adding the bitter melon to the pan.

Cook both until bitter melon is soft. If needed, cut chicken into smaller pieces.

When the porridge is done in the rice cooker, add the cooked chicken and bitter melon to the mix.

In your own bowl, add black pepper.
