Cooking Instructions

Pour chopped fresh dates into the boiling water in a jug

Mix margarine oil and sugar until the sugar dissolves

Add eggs mix. Then flour,bicarbonate of soda,and baking powder salt also mix
- 4
Add a jug of water and dates mix well.pour the cake mixture into the greased baking tin and bake for 45 mins at 180' C
- 5
Leave to cool and serve

I tried this cake at the Boulangerie Le Pain dans les Voiles in Montréal and liked its combination of dates and coconut. Apparently it was named after the Queen of Canada, Elizabeth II, and probably created in 1953 to celebrate her coronation. Or was it invented in 1937 for the coronation of King George VI and named after his wife, Queen Elizabeth? Regardless of its origin, the cake is delicious. Ricardo -
