Pound the thyme, shallots and garlic with salt and pepper in a mortar to a rough paste

Rub the paste over the chicken breast and allow to marinate for 1 hour

Boil the carrot sticks in water with 1/2 teaspoon salt, 1 teaspoon sugar and 1/2 a tablespoon butter for 5 minutes. Drain through a sieve

Cut the eggplant lengthwise in half, sprinkle a little salt on the cut side.

Place the eggplant with the carrot on a greased oven tray and roast in a 200 degrees oven for 20 minutes or until the eggplant is soft.

Meanwhile, grill the chicken breast on a greased grill 7 to 10 minutes on both sides, time will vary based on the thickness of your chicken breast

Arrange the chicken breast with the roasted veggies on plates and serve with roasted potatoes
