Cooking Instructions

Clean and chop Spinach into thin strips

Blanch in water with a sugar. Sugar helps retain the fresh green colour even after blanching. Blanching in microwave takes about 5 mins.

Run the blanched spinach under cold water and keep aside.

Whisk Curd until smooth and add salt.
- 5
Make a tempering in Oil with mustard seeds, chopped onions and hing.
- 6
Add the washed spinach to the whisked curd and mix well. Top this mixture with the ready tempering. Adjust salt if needed.

For that extra flavour, you can add Menthittu and Chutney Podi too to the curd!
