Ingredients

4 peoples
6 servings
  • 2 cupsGlutinuous rice(colour white milk),wash only one time
  • then add water to soak for 2 hours. Then drain the water
  • 1 tspsalt
  • 1pandan leaf
  • 2 cupstin Coconut Cream milk
  • 1whole Chicken cut into 10-12 pieces, skin off
  • 1.5 cmIncision deep cuts parallel
  • 1 cupGreek Yoghurt
  • 4 clovesGarlic smashed cut thinly
  • 6 cmafresh Ginger sliced very thinly (or Ginger paste 2 tsp)
  • 2 tspgaram Masala powder
  • 1 tbsBaba Curry powder
  • 1 tbsTurmeric powder
  • 2lime-kaffir juices
  • 2 tbswhite vinegar
  • 2 tspsalt
  • 2 tbssugar
  • 1 tspMustard
  • 1 tbsKashmir Red Chili powder (mild chili) or
  • (or 1 tsp Cayenne Pepper powder is up to your preference)
  • 2 tbsButter
  • 2 cupsRice Bran Oil for deep fry
  • Garnish: 1 bunch Coriander leaves, chop roughly w/ the stems

Steps

    In a Rice Cooker add the pre-soaked glutinuos rice then put 2 cups coconut cream milk, 5 cups waters, salt and pandan leaf. Cook on high for 10 minutes then lower down the heat, put the lid on and simmer for 20 minutes or until softened. Let it settle for 15 minutes with the lid on, then transfer into a deep large serving bowl, discard the pandan leaf. Garnish with the herb Coriander leaves on top centre, the rice has a beautiful fragrant aroma. Cover top to keep warm.

    Remove any skin of the Chicken, then using a sharp knife cut 4-6 parallel diagonal slits into each chicken's legs piece, cut all the way to the bone. Season with salt. For marinade: add mixture of Yoghurt, Red Kashmiri powder or cayenne pepper, Ginger paste and salt. Marinade for 30 minutes.

    In a wok on high heat 2 cups oil. Place the chicken pieces in the hot oil & cook until just brown, turn over and cook for 2' Half cook pieces, almost brown on both sides then turn off the heat. Don't over cook. Transfer the half cooked chicken into a big bowl.

    In the wok,heat 1 tbs oil& 2tbs butter:add the rest of the ingredients: turmeric, mustard,curry powder, garam masala, Garlic,salt, black pepper, Cayenne pepper.Mix well and cook on low temp for 1'. Then put the Chicken back into the wok:mix the meat to the spicy bumbu with the big spoon until chicken are well coated,add lime-kaffir juice,white vinegar,sugar & 2 cups coconut cream milk and mix all, cook in mild temp for about 10'. Taste the season.Remove chicken into serving deep dish.

    To serve warm: Put the chicken pieces on top of Glutinuous Rice as bed. To drink with a cup of hot Jasmin tea or with a glass of Sparkling Red Wine. Cheers 😙🍲🎊🎈

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
