Cooking Instructions

Blend garlic, galangal, lemongrass, coriander roots, chillies and onions in a blender

In a pot, add chicken pieces. Blended paste. Salt, fish sauce/ soysauce, sugar and mix it all together. Do not add oil/ water! 😁

Put the chicken pot on a stove. Then put another pot / big bowl on top (add in water in the top bowl).

Once the water in the top bowl is bubbling. Remove the bowl - Throw water away, mix the chicken in the bottom pot.

Repeat step 3 again by adding cold water in the top bowl wait until it bubbles again (takes around 20 mins each time)

Throw the water, mix the chicken again. Add spring onions& lime leaves and enjoy!
