Make batter first.in a deep bowl, add soji & dahi & mix well.

To make a smooth batter, add 1 Tbsp water one by one out of 1/4 cup water.when the texture is smooth,stop adding.whole 1/4 cup might not needed depending on individual texture of soji & dahi.I have used full 1/4 cup water in mixing.when the batter is nicely blend, cover it & leave to rest for 10 min at room temperature.

While the batter is resting, prepare vegies for filling.cut very fine thin julians of carrot,ginger,red+green capsicums,beetroot,turnip,cabbage,mushroom.chopgreen leaves of spring onion & green chilli finely. Try to make small julian cut. Chop soya as well.

Now the batter has rested for 10 min. Add all vegies in batter with salt.mix well to incoporate all ingredients well.

Make tampering or bhagar / tadka for batter.heat oil in a pan, add rai, zeera & currypata in oil, as soon as they sizzle, add bhagar in batter.Do not over burn bhagar.mix well.

Grease 10×5 Loaf pan/tin with oil. Preheat oven at 180°c for 10 minutes. Lastly, add a level 1/2 tsp of Baking Soda in batter, give a quick mix & pour batter in pan.Sprinkle till (sesame seeds) over batter & keep in oven at 200°c for 30 min.

Check after 30 min.the loaf should have left the sides of pan & getting colour from sides.insert a toothpik inside loaf, if it comes out clean, it means the loaf is ready.otherwise give 5 -7 min more. Open top grill flame for only 3-5 minutes to give some colour to the top of loaf.it is ready without top heat as well. Dont give high heat or more time or it vl become dark from top side.close the heat.let it rest for 10 minutes before taking out from pan.it will comes out neatly.

Place veg loaf on platter, with the help of sharp knife, cut pieces & enjoy savoury veg loaf with cookpad.

Note.rest the batter for 10 min.it will help batter blending of soji+dahi make small very fine julians of vegies or you can use diced vegies as well.Do not add more than 1/3 cup of water as vegies also leave little water of their own.i hvused tin mushrooms, drain them well before adding in batter. Milk can be replaced by water.green chillies can be omit if making for small kids.i hv used exactly the same ratio of ingredients & it turns out perfect. A little savoury little salty.
