Veggie Balls with Spinach Sauce

Cooking Instructions
- 1
Mix all the veggies together along with the flour until they become a dough and start forming small balls. You can freeze them for later use.
- 2
For the sauce, heat the oil and add the garlic until tender and the colour darkens, then add the frozen spinach with half cup of hot water and bring to a boil.
- 3
Add the tomato sauce and mix well, then add the peas and the corn and mix well, then add the tomtatoes, and season to taste. Cover the pan and keep them boiling for at leat 10 minutes then remove the lid and stir, then keep them for at least 5 more minutes to lose 3/4 of their moist.
- 4
In a separate pan, heat some vegetable oil and fry the veggie balls until their colour darkens on low heat so that they cook well from the inside.
- 5
Serve by adding the veggie balls in a plate and then add the sauce around. Season with dry coriander.

Pretty nice meatballs; leftovers can be frozen; use salt reduced paste and stock, and do not add extra salt to the sauce, or else it might be a bit too salty. (Pic has capsicum instead of celery, this recipe is great for substituting veggies) Saffie La Rue -
