Instant Crispy Jalebi

Take a big bowl add semolina and maida mix than add whisked curd and water.

Make thick paste and keep aside 1/2 hour.

Now make Sugar syrup- to make a sugar syrup headwater in a pan over a medium flame add sugar and mix until fully dissolved. Simmer the syrup until it attains one string consistency. Add saffron, cardamom powder and 1/2 lemon juice. stir well.

Now heat ghee in a pan over medium flame for deep frying. now add baking powder in jalebi batter and mix. Fill the jalebi batter in a thick plastic cone or muslin cloth or bottle. Squeeze the bottle/muslin cloth/plastic cone to make concentric circles. Fry till jalebis are crisp and golden.

Soak the jalebi in sugar syrup-: soak the jalebis in sugar syrup for 2 to 3 minutes. Ensure that the sugar syrup is warm and not very hot. Now remove the from the syrup and place on a tray lined with butter paper or foil.

And Serve. Enjoy with kachori or rabri.
